The 24-year-old right-hander walked off the field, holding a bloodied towel to his face and head.
He is expected to be placed on the disabled list.
UPDATE: The Yankees announced Mitchell was taken to New York Presbyterian Hospital for further evaluation.
Mitchell dropped to the ground after the line drive by Twins No. 9 batter Eduardo Nunez hit him and deflected into center field.
The team announced that its doctors will continue to monitor Mitchell through Tuesday for concussion symptoms. It knocked Mitchell off his feet.
Mitchell was making a spot start for the Yankees, who moved their regular starting pitchers back one day.
After Masahiro Tanaka’s complete game on Saturday, the Yankees have a pretty well rested bullpen right now, and that includes Caleb Cotham, who’s available for multiple innings and hasn’t pitched in several days.
Mitchell was charged with one earned run in 1.2 innings of work before departing.
